At Larder + Folk in Panjim, Chef Priyanka Sardessai and her team absolutely nail the art of making a sandwich. Training at the Culinary Institute of America and stints under legendary chefs such as Chef Marcus Samuelsson shows in everything Sardessai puts out at her little spot in Panjim. Fresh bread, amazing condiments, fresh vegetables, and well-seasoned proteins build a satisfying sandwich. Larder + Folk proves this to its customers in ‘The OG’ – buttermilk fried chicken with green hot sauce and slaw in a milk bun; in their Sabich – either chicken or falafel with chermoula, tarator, smoked chilli toum and veggies in pita; and in the sumptuous roast beef sandwich decked out with aioli, potatoes, beef gravy, tomatoes, arugula, and sweet pepper relish on ciabatta. They’ve been known to do comforting noodle bowls, a Bánh mi and get a smoked salmon bagel right.
Decadent cookies, donuts and babka keep customers coming back to this bakehouse, coffeeshop and store. Ordinary bakes these are not. Almond fajores are almond cookies with dulce de leche spread between them and a simple chocolate chip cookie is made with brown butter, dark chocolate chips and salt. If you’ve never tried a savoury donut, here is your chance – Hot honey is a rich and spicy combination of fried chicken, spicy honey, and sour cream. Sweet donut options include butterscotch, black forest, tiramisu, cheesecake, and dark chocolate bambolinis. They experiment with new flavours all the time too.
Spice up your pantry with bottles of raw mango mustard, passion fruit hot sauce and prawn pepper chili oil. Larder + Folk is one of few bakeries in Goa to sell babka and challah and probably the only one to sell Hokkaido milk bread. Pre-order babka in either chocolate hazelnut, salted white chocolate and pistachio or pesto.
